First up is Jess Pryles, who arguably knows more about meat from hoof to table than anyone on the planet. The “Hardcore Carnivore” tells us about emceeing the recent World Butcher Challenge in San Diego where teams from around the world showed their knife skills. We also visited with Jess about her summer trip to Europe, the beef tallow trend, best bangs for the buck at the meat counter and her product line that soon will introduce the first Hardcore Carnivore sauce.

Then it’s time to catch up with Heath Riles to discuss his busy 2022, which includes his first Memphis in May World Ribs Championship.
